Starting with Ayataka Green Tea
Tonkotsu-Ramen Champion – $16.50 (red bowl)
Unlike the traditional tonkotsu, Mendokoro Aoi’s broth is cooked with a big flame over shorter hours resulting in a smooth broth. The added pork and chicken feet provide extra collagen giving the broth a creamier taste. Spices such as garlic, ginger and chilli are added for a mild spicy flavour which mask the smell of pork bones. Finally, a dash of specially prepared bean paste mixed with tomato and chilli is topped onto the ramen to complement the taste.

Special Tonkotsu Ramen – $16.50 (black bowl)
Originated from Toyko but following the Hakata style of ramen, Tonkotsu Itto’s ramen tastes of rich, milky, pork-bone tonkotsu broth with rather thin, non-curly, resilient noodles. Prepared in the traditional tonkotsu way where the pork-based soup is cooked for several hours to allow the essence of the pork bone to fill up the base.
